Ingredients:
- 2 ½ pounds of carrots, peeled and chopped
- 3 tablespoons of extra-virgin olive oil
- Salt
- 1 large leek, white and pale green parts only, thinly sliced
- 1 large onion, thinly sliced
- 2 cloves of garlic, minced
- 3 sprigs of parsley
- 5 cups of vegetable broth
- 1 cup of carrot juice
- 4 tablespoons butter
- 2 tablespoons of lemon juice from 1 lemon
Instructions:
- . Preheat oven to 375 degrees F. On a parchment-lined baking sheet, toss half of the carrots with 1 tablespoon of oil, season with salt. Roast, stirring halfway through until carrots are tender and deep golden brown in spots. Should take about 25 minutes. Set aside.
- 2. In a large pot, heat remaining 2 tablespoons of oil over medium heat. Add leak, onion, and garlic. Stir frequently, until soft but not brown, roughly 8 minutes.
- 3. Add remaining carrots along with the roasted carrots, parsley sprigs, vegetable stock, and carrot juice. Season lightly with salt. Bring to a boil over high heat, then lower to maintain a steady simmer. Stir occasionally, until all the carrots are completely tender, about 25 minutes. Discard parsley. Add butter and stir.
- 4. Use an immersion blender to blend the soup until smooth. If soup is too thick add more stock or carrot juice as needed. Which in lemon juice and season to taste with salt.

2. Carrot Soup with Ginger
This simple 9 ingredient soup with a touch of ginger is one of my favorite fall recipes. It can be sweet, spicy or simply declicious by adding optional touches to match your tastes. It is the perfect cozy meal for a fall day.
Ingredients:
- 1 tablespoon extra-virgin olive oi
- 1 small onion, chopped
- ½ teaspoon sea salt
- 1 cloves of garlic, minced
- 1-pound carrots, peeled and chopped
- 1 teaspoon of grated fresh ginger
- 1 tablespoon of apple cider vinegar
- 3 cups vegetable broth
- Freshly ground black pepper
- 1 teaspoon maple syrup, optional
- Coconut milk for garnish, optional
- Fresh cilantro for garnish, optional
- Chili Flakes for garnish, optional
Instructions:
- Heat olive oil in a large pot over medium heat. Add onions, salt and pepper and cook until soft, stirring occasionally, should take less than 8 minutes. Add garlic and carrots. Cook for another 8 minutes, stirring occasionally.
- Stir in ginger, apple cider vinegar, and broth. Bring to a boil. Reduce heat to low and simmer for 30 minutes.
- Let cool slightly. Blend with a hand immersion blender until smooth. If your soup is too thick add a little water.
- Serve in JUstenbois maple wood bowls. If you would like your soup a little sweeter, add the maple syrup. Garnish as you wish with coconut milk, chili flakes, and/or cilantro. The natural wooden finish adds warmth to the presentation as well as too the meal, keeping it warmer longer. It makes every spoonful feel rustic and comforting. Eating with a maple wood spoon will not alter the taste of the food as can happen occasionally with metal utensils.
3. Carrot and Coriander Soup
This carrot and coriander soup is a heartier option for carrot soup. With its sweet and tasty carrots, garlic, onion, coriander and cumin added flavors, and the addition of butter and cream make it a soup you will want to eat by the fire on a cozy winter evening.
Ingredients:
- 2 pounds carrots, peeled and chopped
- 1 small onion, chopped
- 3 cloves of garlic, minced
- 2 tablespoons of butter
- 6 cups of vegetable broth
- 1 cup of heavy cream or diary alternative like almond milk
- 2 teaspoons of salt
- Freshly ground black pepper
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 2 tablespoons of lemon juice
- Fresh cilantro – roughly chopped
Instructions:
- In a large pot, melt butter. Stir in garlic and stir for 2 minutes. Stir in onions, the add carrots, coat with butter mixture.
- Add vegetable broth. Bring to a boil, reduce heat to medium high and continue to boil for 10-12 minutes until carrots are very tender.
- Remove from heat and blend with a hand immersion blender until it is a smooth puree.
- Return to low heat and stir in cream, salt, pepper, ground coriander, cumin, and lemon juice. Ready to serve in less than 5 minutes.
- Add chopped cilantro to garnish before serving.
